Just add 1 quart of your favorite vinegar (Apple Cider, Balsamic, Pear, Rice, Fig or Red Wine Vinegar, etc.) to the seasoning packet, mix well and allow to "cure" overnight. Imagine creating your own unique marinade or BBQ sauce, in flavor and character, by using a different vinegar. In Eastern North Carolina, we pair Wild Boar Sweet ' n Sassy BBQ Spice Mix with apple cider vinegar to create an authentic "pig pickin' BBQ sauce.
